Caramelised Pears with Mint and Strawberry Consomme


  • 2 pears, peeled and sliced into wedges

  • 1 tbsp butter

  • 3 tbsp sugar

  • ½ lemon, juiced

  • 2 punnets strawberries, hulled and halved

  • 5 tbsp caster sugar

  • Handful mint, torn


  • 1.

    Melt butter in a hot pan. Add pears, 2 tbsp sugar and the lemon juice and cook until soft.

  • 2.

    Place strawberries in a large heat-proof bowl and add sugar and mint.

  • 3.

    Cover with clingwrap and place over double boiler for about 10 minutes.

  • 4.

    To serve, spoon some strawberries on a plate and then top with a spoon of pears.
