Green Beans with Creamy Dressing


Serves 8

Ingredients

  • 300gr baby green beans (top & tail)
  • Creamy Tarragon dressing (see below)
  • Sea salt

Creamy Tarragon Dressing:

  • 15mls (1 Tbsp)Tarragon vinegar
  • 10gr (2 tsp) Dijon mustard
  • 5gr (1 tsp) Garlic – chopped
  • 10gr (1 Tbsp) Chopped parsley
  • 175mls ( ¾ cup) Mayonnaise
  • 25gr (1 ½ Tbsp) Chopped French tarragon
  • 30gr (2 Tbsp) Chopped shallots
  • 15mls Water
  • Good Pinch Salt
  • 15gr (1 Tbsp) Anchovies
  • Tabasco

Method

  1. Blanch the baby green beans, in boiling salted water till tender, drain refresh under ice water
  2. Place the mayonnaise in a bowl and add everything else and mix
  3. Place the beans in another bowl, just add enough of the dressing to coat the beans, season
