Minted New Season Potatoes


Serves 4

Ingredients

  • 600g new season potatoes
  • ½ cup mint
  • 2 cloves garlic
  • Salt
  • 60g butter

Method

  1. Rinse the potatoes of any dirt.
  2. Place in a sauce-pan and cover with water, mint, garlic and salt to taste.
  3. Place on a moderate heat and simmer gently for 15- 20 minutes until just cooked.
  4. Remove from the heat, drain off the water and add the butter swirl around in the pan, turn out into a serving bowl and serve hot.
