Macadamia Nuts in Macadamia Oil and Rosemary

I especially wanted to do this as we have our own macadamia trees and crack our own.

Serves 8

Ingredients

  • 24 fresh raw macadamias
  • 3 tablespoon macadamia oil (can easily replace with extra virgin olive oil or vegetable oil)
  • 3 tablespoon stripped rosemary leaves
  • 1 teaspoon sea salt flakes

Method

  1. Toss all ingredients in a bowl.
  2. Place frying pan over high heat (pan must be hot before you add the macadamias).
  3. Saute in two batches (so you don’t crowd the pan) until the rosemary is cooked and macadamias warm (approximately 3 minutes).
  4. Eat immediately with a glass of wine.
