Crispy Pan Fried Silky Tofu

I love tofu, but many people think it doesn’t have a flavour of its own, instead it absorbs any flavour it’s cooked in. To me, tofu has light creamy soy bean flavour with soft delicate touch on the tongue. This dish gives the soft silky tofu texture inside with a crunchy bite outside, with the dipping sauce and shallots and coriander giving it a fresh yummy taste.

Serves 2

Ingredients

  • Silky tofu………………..1 large block
  • Rice flour………………..1 cup
  • Salt………………………...2 tbsp
  • Pepper………………..….2 tbsp
  • Dipping sauce:
  • Soy sauce……………………….3 tbsp
  • Garlic………………………….….2 tbsp
  • Sesame oil…………..............2 tbsp
  • Sugar………….………………….1 tbsp
  • Chinese black vinegar…....1/2 tbsp
  • To garnish:
  • shallots
  • Coriander

Method

  1. Cube the Tofu, pet dry
  2. Mix Rice flour, salt and pepper in a bowl
  3. Dust cubed tofu in the Rice flour mixture carefully (not breaking it), and make sure 6 sides are covered
  4. Heat up a pan with some oil, placed dusted tofu in pan to brown, do it for all sides
  5. When all 6 sides are crispy and brown, place in a serving plate, garnish with chopped shallots and coriander.
