Place the cherries in a saucepan with 30mls water. Cook over a low heat for 6 – 8 mins, stir in the sugar and cook a further 5 minutes or until soft.
In a bowl use your fingertips to rub the butter into the flour until fine crumbs form. Stir in the oats, demerara sugar and crushed amaretti. Mix well place in oven to dry a little.
Spoon the cherries into an ovenproof dish. Sprinkle the crumble mixture over the top.
Bake for approx 40 minutes or until golden. Cool slightly and serve with mascarpone.
