Hairy Eggs!


Scrambled eggs for kids

Serves 2 to 0

Ingredients

  • One egg per child.
  • Dash of milk.
  • Pinch of salt.
  • Sprinkle of finely chopped basil
  • 1 cup fresh finely grated parmean cheese (so it looks like skinny worms!)

Method

  1. Crack eggs into bowl.
  2. Whisk with dash of milk.
  3. Add in basil & pinch of salt.
  4. Cook in medium heat pan until eggs congealing, milk evaporating, stir frequently.
  5. Once cooked, add in one third of the grated cheese and whisk for 1 minute.
  6. Plate up and pile the cheese on the eggs! The hairier, the better!
  7. Garnish with finely chopped basil.
  8. Variations:
  9. Add peas, or grated zuchinni (corgettes)/carrots for extra nutrition.
  10. A quick, easy meal that the kids love!

If you really want to make it different, add a couple of drops of food colouring and see what happens...
