Mud crab sandwiches with harissa mayonnaise

Serves 4

Ingredients

  • 1 cup cooked Crabmeat
  • 8 Slices white bread crusts removed
  • good quality Butter to butter the bread
  • 1 teaspoon Harissa
  • 4 tablespoons good quality mayonnaise or Aioli
  • sea salt
  • White pepper
  • 1 Lemon zest only
  • thinly cut iceberg lettuce

Method

  1. Butter the bread thinly
  2. Mix the crab with all the other ingredients except the lettuce
  3. place the crab mix on the bread and top with the lettuce
  4. top with the other piece of bread and cut into thirds

    Nothing beats a Muddie Sanga. Can't wait till the season starts again & try the Harrissa with the Aioli - sounds incredible.
