Very nice, but what am I supposed to do with the lemon juice? Should I have mixed it with the butter? or would it have curdled?

Just caught the last bit on TV. What is manchego cheese, can I use something else.
I would add the lemon juice with the butter.

We had this for dinner tonight, it was fantastic! So much flavour. Used mozorella and manchego, was delicious. Used large portebello mushrooms.
