Smoked Trout and Feta Mousse with Rye Bruschetta


Serves 4

Ingredients

  • 3 cups of smoked trout fillets, flaked
  • ½ cup feta
  • 1 tbls capers, chopped
  • 1 tbls fresh lemon juice
  • 1 tbls lemon rind
  • 1 tbls spring onions, finely chopped
  • 1 tbls dill, chopped
  • 1 tbls parsley, chopped
  • 2 anchovies
  • Pinch of white pepper
  • Rye sourdough, grilled with olive oil

Method

  1. Place all ingredients in a blender and process until fairly smooth. It’s ready to serve with lemon wedges and bruschetta

    janelle i loooooooooooooooooove the way you cook its the way i like to cook as well but i havent got that much experience like u have when i see garry cook all i think of his weight gain but i can see the health benefits with yours its goin to be my 50 th on the 9th dec and im goin to make the trout mouse as a dip
