Enzo's Ricotta Fritters

This a classic way to use Ricotta and they turn out really light and fluffy. We have them on the weekend as a special treat.


  • 2 cups fresh ricotta cheese

  • 2 eggs

  • ¼ cup caster sugar

  • ½ tsp vanilla extract

  • 1/3 cup self raising flour

  • zest of an orange

  • pinch of salt

  • grated nutmeg

  • 250ml sunflower or canola oil


  • 1.

    Pre heat oven to 120 degrees C

  • 2.

    In large bowl whisk together ricotta cheese, sugar, vanilla and eggs

  • 3.

    Add the orange zest, and salt and sift in the flour and mix well.

  • 4.

    Beat until all ingredients are well combined

  • 5.

    In a small pot heat the oil until hot

  • 6.

    Drop 1 large tbsp at a time without crowding the pot.

  • 7.

    When they are golden brown quickly turn them over and cook the other side

  • 8.

    Transfer to a large with absorbent paper to drain excess oil.

  • 9.

    Keep warm in the oven until all the batter is finished.

  • 10.

    Serve with your favourite jam or honey and fresh strawberries with yoghurt


You have to keep an eye on them when cooking as they can brown quite quickly because of the sugar.You can also use lemon zest as well.
We have alsio served them with other fruits and whipped cream.
