Mexican Dip


Very tasty dip to have with corn chips or rice crackers.

Serves 4 to 6

Ingredients

Method

  1. In a medium sized missing bowl combine refried beans and salsa together. Spread over the base of a pie dish. Mix the taco seasoning with the avocado, red onion, juice of lemon and balsamic vinegar and gently spread over the top of the bean mix. Spread yoghurt or sour cream over avocado mix and then sprinkle cheese, tomato, shallots and capsicum over that.
  2. Refrigerate and serve when required with corn chips or rice crackers.

    I have found this is very nice on a cold night if microwaved for three minutes and served warm, enjoyed by all present. But I have made this leaving out the hot salsa, vinegar and yoghurt, only because I never had them at the time, still tasted good.
