Mexican Dip

Very tasty dip to have with corn chips or rice crackers.

Ingredients

  • 1 435g can of refried beans

  • 1 300ml jar of hot salsa

  • 1 tb taco seasoning

  • 1 cup avocado mashed

  • .5 lemon

  • .5 ts balsamic vinegar

  • .5 small red onion

  • 1 200g tub of low-fat natural yoghurt or light sour cream

  • .25cup grated tasty cheese

  • 2 roma tomatoes chopped

  • 2 shallots chopped

  • .25 cup capsicum chopped

Method

  • 1.

    In a medium sized missing bowl combine refried beans and salsa together. Spread over the base of a pie dish. Mix the taco seasoning with the avocado, red onion, juice of lemon and balsamic vinegar and gently spread over the top of the bean mix. Spread yoghurt or sour cream over avocado mix and then sprinkle cheese, tomato, shallots and capsicum over that.

    Refrigerate and serve when required with corn chips or rice crackers.
