Stefano's Easy Roast Pork


Ingredients

  • ½ a rack of pork ribs
  • 200 mil olive oil
  • Fennel seeds
  • Coriander seeds
  • Salt
  • Peppercorns
  • 1 lemon

Method

  1. With a knife, cut into the skin of the pork creating a cross hatch effect for the spices to be rubbed into. Prepare you Pestle and mortar with peppercorns, Fennel seeds and coriander seeds. Grind until fine. Add the ground spices into a medium sized bowl. Add a big pinch of salt, half a cup of extra olive oil and mix it all together with a spoon.
  2. Place the Rack of Pork into a large tray, skin up. Pour the spices over the skin while slowly rubbing it into the skin with your hands. With a knife cut some holes in between the meet and the skin of the pork. Push some more of the mixed spices into the holes. Place the tray into the oven at 180 degrees for about an hour and a half. Serve on a bed of fresh fennel and lemon with a fresh garden salad.
