Piadina with Tuna


  • Piadina:

  • 500g flour

  • 50g Lard (use butter if vegetarian)

  • 200ml Water (lukewarm)

  • Pinch of salt

  • Splash of olive oil

  • Filling:

  • Tuna, thinly sliced

  • Lemon

  • rocket

    To make the piadina, make a well with the flour and pour the lukewarm water into it. Add the lard, some salt, and a drop of olive oil. Mix it all together – like kneading bread – make it into a ball and then flatten it like a very thin pizza base. Use a rolling pin, and make as many piadinas as you like.

    Cook the piadina on the BBQ, maybe 60secs each side. Cook the tuna very lightly on the BBQ adding salt and pepper to taste. Add the tuna to the piadina, then rocket, olive oil and lemon.
