Kangaroo Tail Soup


Ingredients

  • 3 Kangaroo tails
  • Pinch Kuccura
  • Pinch Tananmi apple
  • Pinch Pepper berry
  • Pinch Pepper leaf
  • Pinch Mountain Pepper
  • 4 Carrots chopped
  • 1 Celery chopped
  • 1 Parsley bunch (fresh)
  • 2 litres Beef Stock

Method

  1. Cut kangaroo tail.
  2. Place the kangaroo tail in the pan and fry.
  3. Fry the garlic, onion, then add the carrot and celery.
  4. Add a subtle amount of bush spices, try to be moderate with them.
  5. Let this simmer, then add the tomato paste and red wine right at the very end.
  6. Serve this dish with damper or bread.
