Barbeque Quail


Serves 4

Ingredients

  • 8 quails, deboned or split through the middle with kitchen scissors (meat cooked on the bone is always tastier. Deboned meat is faster to cook.)
  • 2 tablespoons preserved lemon, chopped
  • 2 teaspoons cumin powder
  • ½ cup olive oil
  • salt to taste

Method

  1. Place all the ingredients in a bowl and massage the marinade into the quail.
  2. Leave it in the fridge for a few hours.
  3. Heat the BBQ and cook the deboned quail for a few minutes on each side and longer if on the bone.
  4. Serve simply with a fresh green salad.

    Tried this, but added a little chilly too. so so tasty and presentation and taste a great success. So so simple Fantastic results. A real winner!
