Chicken with sparkle

a breast of chicken coated with pesto wrapped in proscuitto and poached in Sparkling wine and served with a honey mustard sauce


  • 2 chicken fillets cut in half each

  • jar of pesto or fresh pesto

  • 4 slices of proscuitto

  • 1/3 bottle sparkling wine


  • 1.

    Pound out chicken between baking paper.

  • 2.

    Spread tablespoon of pesto of chicken

  • 3.

    Roll chicken up and roll prosciutto over it and enclose with 2 toothpicks one on each end

  • 4.

    Place in baking dish

  • 5.

    Pour over sparkling wine and bake covered with foil in oven 180 until cooked about 40 minutes

  • 6.

    Uncover for last 10 min pour over a honey mustard sauce just before serving


Jar bought pesto is just fine for this
A cheap bottle of sparkling wine is just as good
