A gorgeous light salmon with accompanying salad that is perfect on warm summer days.
Mix together the Soy sauce, Oyster sauce, Sweet chilli sauce and Honey in a bowl.
Coat the salmon in this marinade and keep covered in the fridge for at least 15 minutes.
Cut mango into small piece and mix through chopped lettuce leaves.
Arrage on plate as desired.
Crumble Fetta over salad.
Cook the salmon on a high heat until rare - approx 2 - 3 minutes on each side depending on the thickness.
I have also substituted mandarine pieces instead of mango when in a bind at it still tasted really good!
