Orecchiette with Chicory , Pancetta & Garlic

Quick , simple & tasty recipe with only 6 ingredients.
One of my favourite quick meals , found years ago in Australian House & Garden Magazine


  • 2 Tablespoons- Extra Virgin Olive Oil.

  • 125g- Pancetta or Bacon , cut into slivers.

  • 4 -large cloves Garlic , chopped.

  • 500g- Orecchiette , or other short pasta like Penne orFusilli.

  • Salt.(to taste).

  • 1 bunch- Chicory or Rocket , stems removed.


  • 1.

    Combine olive oil and pancetta in a pan (large enough to hold pasta later).

  • 2.

    Cook over moderate heat until pancetta is golden & crisp (about 5mins.)

  • 3.

    Meanwhile , cook orecchiette in plenty of salted boiling water until nearly 'al dente'.

  • 4.

    Add garlic to pan with pancetta and cook until soft , add chicory (rocket).

  • 5.

    Cook until wilted .

  • 6.

    Then add pasta and approx 1/2cup pasta water to pan with other ingredients.

  • 7.

    Add salt to taste and drizzle over olive oil.

  • 8.

    Serve with crusty bread and a nice red.

  • 9.

    Preparation time approx 30 mins including cooking time.


You can also cook the chicory in with the pasta,
