Zucchini & Date Cake

A fantastic cake recipe from Simply Food voted Australia's Favourite Vegetarian in the 2009 I Love FOOD awards.

Ingredients

  • 1¼ cup of firmly packed brown sugar
  • 3/4 cup vegetable oil
  • 1/2 cup orange juice
  • 3 eggs, lightly beaten
  • 3 cups coarsely grated green zucchini
  • 3 cups wholemeal self raising flour
  • 1 cup walnuts, chopped
  • 250g packet of pitted dates, chopped
  • 1/2 teaspoon bicarb soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking powder

Method

  1. Preheat oven to 180c.
  2. Grease a suitable cake pan. Line with non stick baking paper.
  3. Beat together sugar, oil, eggs & orange juice until creamy. Add the rest of ingredients. Pour into prepared pan.
  4. Bake in oven for approx 1 & 1/4 hours. Test centre of the cake with skewer.
