Banana Loaf


Banana Loaf

This receipe is SO moist & I like to leave my Banana fairly chunky when I add it to the cake mixture. Delicious with a cuppa.

Ingredients

  • 3 very ripe bananas
  • 125g of melted butter
  • 1/2 cup of milk
  • 2 teaspoons of vanilla extract
  • 1 whole egg plus 1 extra egg yolk
  • 1 cup of plain flour
  • 1/2 cup of self raising flour
  • 1 level teaspoon of ground cinnamon

Method

  1. Pre-heat your oven to 180C Conventional. Grease & line a 20cm Loaf Tin.
  2. After melting the butter, add Milk, Eggs, Vanilla & roughly chopped/mashed Bananas.
  3. In another bowl, sift in both flours & Ground Cinnamon.
  4. Make a well in the centre of the dry ingredients & pour in the wet ingredients.
  5. Mix well until combined & pour into a greased & lined Loaf Tin - approx 20cm long & bake for approx 45 minutes - testing with a skewer towards the end of cooking time. Allow cake to cool in Loaf tin at least 10 minutes before turning out onto a wire rack.
  6. Serve warm or cold.

Notes & Tips

Sometimes I have also added 1/2 cup of chopped Walnuts to this recipe too - it adds a nice crunch!
