Spinach and Apricot Salad

This deliciously simple recipe is a signature dish from the 2009 I Love FOOD award winner for Best Vegetarian in the NT.

Serves 8

Ingredients

  • 3 bunches of spinach, stalks removed & leaves chopped
  • 2 red onions, peeled and sliced finely
  • 1/2 a red cabbage, shredded finely
  • 500g packet of apricots, sliced
  • 250g sunflower seeds, toasted

Dressing

  • 1/2 cup oil
  • 1/2 cup lemon juice
  • 1/2 cup honey

Method

  1. Place all ingredients into a bowl.
  2. Blend dressing ingredients well and adjust to taste.
  3. Add dressing to salad and mix well.
