Ursula’s Chocolate Torte

Ursula Nairn is my mentor. I first met her when I was eighteen working as a waitress at her restaurant in Cottesloe. She gave me this recipe back then and I have baked this delicious cake ever since for all kinds of special occasions.

Ingredients
  • 300gms dark cooking chocolate
  • 6 egg yolks
  • 100gms castor sugar
  • Dash of vanilla extract
  • 200gms unsalted butter (at room temp)
  • 3 egg whites
  • Pinch of salt
  • 100gms almond meal
  • 2 Tablespoons corn flour
  • ½ teaspoon baking powder
Method
  • Melt chocolate in the microwace on low heat and set aside to cool.
  • Beat yolks, sugar and vanilla until pale and creamy.
  • Continue beating and slowly drizzle in all of melted chocolate.
  • Cut butter into cubes and add gradually to mixture whilst beating.
  • In a separate bowl mix almond meal, corn flour and baking powder together. Then add to chocolate mixture and stir until well combined.
  • Beat egg whites and salt to soft peak and then fold gently into cake mixture.
  • Bake in lined cake tin in a preheated 160C oven until just firm, takes about half an hour.
Serves 8
