Combine the chocolate and the butter in a bowl large enough to sit suspended over the top of your saucepan without touching the water.
Bring the pot of water to the boil. When boiling turn it off and place the bowl over the top.
Combine the eggs, sugar and vanilla in a mixing machine and whisk until light and fluffy.
Combine the melted chocolate and whisked egg mixture; add the salt, flour and chopped nuts and combine.
Grease and line a tray with parchment paper and lightly grease the inside. Pour in the brownie mixture and spread evenly.
Place the tray into a pre-heated oven at 160 degrees and bake for 35 minutes.
When cooked the brownie should feel just firm.
Remove from the oven and allow to cool.
You can eat this straight away but for a great dessert I like to reheat in a bamboo steamer for 5 minutes so that it becomes soft and gooey served with vanilla ice cream and dusted with icing sugar.
Why line the bottom of the steamer with wax paper? So that the brownie doesn't become wet? Is that really necessary? And isn't 450g of sugar a bit much? I dislike desserts that are too sweet but I would like to hear the opinion of someone who made it before I make the recipe with less sugar!
HI LoveFood :), You buy bamboo steamers and lids from asian grocers. They are very cheap. You can get one with a lid for around $5 depending on the size. They are stackable to you can buy additional steamers and for making dim sum at home. I have included a link below to explain better.

If you are going to do what I did with the bronies, don't forget to line the bottom of the steamer with wax paper. Once the water is boiling, the brownie will only need up to a minute to warm through adequately.
Kali Orexi & Bon Appetit!
Just had my first piece. The steaming really does take it to the next level indeed. This is a restaurant quality brownie. For an additional boost, drizzle a couple of tablespoons of Amaretto over the brownie! As Ian Parmenter would say...BLISS!
