Barbequed Butterfly Leg of Lamb with Greek Salad

Anna's best leg of lamb recipe ....

Serves 6

Ingredients

Lamb

  • 1 leg of lamb, butterflied
  • 10 cloves of garlic
  • Juice and rind of 1 lemon
  • Olive oil
  • 500gms natural yoghurt
  • 1 tablespoon rosemary
  • 1 tablespoon oregano
  • 1 tablespoon thyme
  • 1 tablespoon italian parsley
  • pepper and salt

Greek garden Salad

Method

  1. Combine all marinade ingredients in a bowl and then cover the lamb in marinate.
  2. Marinate for at least 2 hours or overnight is best.
  3. Scrape back marinade (reserving marinade) then char both sides of the lamb on a hot BBQ grill.
  4. Put marinade back on lamb and finish in hot 250 deg oven for approx 20 mins for a pink / medium result.
  5. Cooking time will depend on thickness of leg and how well cooked you like it.
  6. Rest for a few minutes then slice and serve.

Greek garden Salad

  1. Toss all together and dress with extra virgin olive oil and a squeeze of lemon juice.
