Spiced Chicken Rice Pilaf


As usual, found a recipe and thought, "What can I change...?" ha ha and here is the result - yum!

Serves 3 to 4

Ingredients

  • 1 1/2 tablespoons butter
  • 1/2 spanish onion, diced
  • 1/2 red capsisum, diced
  • 2 chicken breasts, diced
  • 1c basmati rice (or cous cous would be nice for a variation)
  • 2 1/2 c chicken stock
  • 3/4 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 pinch saffron
  • 2 tablespoons sultanas
  • 1 1/2 tablespoons craisins
  • 6 apricots, diced
  • Pinch rock salt
  • 3t flaked almonds, toasted
  • Cracked black pepper
  • Fresh herbs to garnish

Method

  1. Melt butter in a large saucepan, add onion and saute over medium heat until softened.
  2. Add capsicum and cook for 2 minutes or until fragrant.
  3. Increase heat to high, add chicken and stir until cooked.
  4. Add rice or cous cous and stir to coat with chicken mixture.
  5. Add stock, spices, dried fruits and salt, stir to combine and bring to the boil.
  6. Reduce heat to low, put the lid on and simmer for 15 minutes (less if using cous cous - probably 5 to 10 minutes).
  7. Serve hot sprinkled with toasted almonds, fresh herbs and cracked pepper.
  8. To toast almonds, place in a saucepan over low to medium heat and cook, stirring occasionally until golden and aromatic.

Notes & Tips

Would be delicious with extra vegetables such as diced green capsicum or sweet corn kernels.
