Classic tortilla

Ben's best tapas dish ...

Serves 4

Ingredients

  • 3 medium onions sliced
  • 4 medium waxy potatoes, par cooked
  • 6 Whole free range organic eggs
  • Salt pepper
  • Olive oil

Method

  1. Heat some olive oil in a pan and slowly fry the onions until golden and soft.
  2. In the same pan, heat more olive oil and fry the diced cooked potato until golden and crispy.
  3. Drain the potatoes and then combine with the onions.
  4. Whisk the eggs and mix into the onion and potato mixture, season with salt and pepper.
  5. Heat more olive oil in a non-stick 8”-10” pan and pour the tortilla mixture into the hot pan.
  6. Place into a preheated oven and cook until firm.
  7. Remove from the oven and turn out onto a plate and allow to cool.
