Berry and Ricotta Pancakes.

Summed up in one word - YUM! I love these for brekkie (occasionally) They're light and delicious and totally morish!


  • 125g sifted plain flour

  • 1 tsp baking powder

  • 1 beaten egg

  • 250 ml buttermilk

  • 2 tbsp sugar

  • 80g melted butter

  • 1/3 cup ricotta

  • 1/2 cup mixed berries (frozen ones work well too - don't thaw)


  • 1.

    Sift flour and baking powder into a bowl.

  • 2.

    Add beaten egg and buttermilk and beat into flour with electric mixer.

  • 3.

    Beat in sugar and melted butter.

  • 4.

    Stir through the ricotta and berries.

  • 5.

    Let the mixture sit for 20 mins.

  • 6.

    Heat a non stick frypan over medium heat.

  • 7.

    Spray with cooking spray.

  • 8.

    Add batter in 1/4 cup batches.

  • 9.

    When you see little holes appear, flip pancakes over and cook other side.

  • 10.

    Serve with maple syrup or ice cream


Fresh berries are great in this recipe but I have used frozen mixed berries and they work really well but cut some of the larger berries into smaller pieces
