Cajun Salmon with Raita

A fantastic salmon recipe from Lagoon Seafood Restaurant voted Australia's Favourite Seafood Restaurant in the 2009 I Love FOOD awards.

Serves 1

Ingredients

  • 10g cajun spice
  • 3 tsp olive oil
  • a pinch of sea salt
  • 200g Atlantic salmon fillet
  • 15ml brandy

Cucumber & Yoghurt Raita

  • 2 tbs yoghurt
  • 1/4 cucumber, diced
  • garlic
  • salt

Method

  1. Mix Cajun spice with olive oil and sea salt, then roll the Atlantic salmon fillet into this mixture. With the skin side up, cook on skillet pan for approx. 1½ minutes then place into the oven for further 2 minutes.
  2. Remove from oven and glaze with butter heated in the pan with a splash of brandy.
  3. Serve with a cucumber & yoghurt raita.

Cucumber & Yoghurt Raita

  1. Mix the ingredients together. Season with salt.
