Barramundi Kakadu

A great recipe for barramundi from Lagoon Seafood Restaurant voted Australia's Favourite Seafood Restaurant in the 2009 I Love FOOD awards.

Ingredients

  • 200g barramundi fillet
  • Paperbark (thin sheet 20cm by 30cm)
  • 3 natural pepper berries
  • lime (1 slice and 1/2 for squeezing)
  • 1 split chilli
  • a pinch ground lemon myrtle
  • 1 garlic clove
  • small knob of ginger
  • a pinch mixed bush herbs
  • 2 tbs olive oil

Method

  1. Marinate barramundi with ginger, chilli & garlic in olive oil overnight with pepper berries & lemon myrtle.
  2. Wrap in paper bark and cook in a preheated oven 180 degrees C for about 15 minutes.

    Attention Stuart McGill!!! We were most impressed with your clip on the Lagoon Restaurant, especially, when you said it was at Wyong. Being Central Coast residents we searched our local phone book for an address, but to no avail., even the internet gave nil results for a Lagoon Restaurant in Wyong, so we tried the Lifestyle Food link & lo and behold the restaurant isn't at Wyong with ocean views but at North Wollongong( with ocean views) on theSouth Coast. So unfortunately we will be unable to sample the delights described on your program & submit a review as it is a bit far away to go for lunch. A little bit more accuracy would be appreciated in future.
