Veal Paupiettes


A great veal recipe from 1 two 3 Mediterranean Dining voted Australia's Favourite Mediterranean Restaurant in the 2009 I Love FOOD awards

Serves 4

Ingredients

  • 50 g sundried tomatoes
  • 6 slices prosciutto
  • 12 x 65g veal pieces
  • 100 g blue cheese
  • 50 g shallots
  • 400 ml thickened cream
  • 350 g baby spinach
  • 800 g potato mash

Method

  1. Bash veal thinly with meat hammer. Cut prosciutto in half and place on top of each piece of veal. Spread sun dried on top of each piece of prosciutto. Roll each piece and let rest in fridge for 30 minutes.
  2. Seal veal in fry pan, place on baking tray and place in oven for 10 minutes. Using the same fry pan add blue cheese, cream and shallots. Reduce over medium heat. Sautee the spinach in frying pan with butter. Place the mash potato on serving plate, topped with spinach. Place 3 pieces of veal on spinach, topped with blue cheese sauce and serve.
