Carrot Soup


This recipe is what i cooked for a special lunch when my mother and sister dropped in and all i had was carrots in the fridge. I made some home made bagels and the lunch was lovely.

Ingredients

  • 6 carrots finely diced ( 1 kg bag )
  • 2 tbs crushed ginger
  • 1 teaspoon ginger powder
  • 2 lts vegetable stock ( hot ) i used hot water and veg cubes.
  • 1 onion finely diced
  • 2 tbs olive oil
  • 1 tablespoon butter
  • salt to taste

Method

  1. Heat a large pot , add oil and cook onion then carrots , butter and ginger and
  2. ginger powder
  3. cook for about 2 to 3 mins
  4. Pour in stock and cook until all the carrots
  5. are soft enough to blend
  6. Pour into blender and blend until smooth.
  7. Salt to taste.

Notes & Tips

Serve in a large soup bowl with fresh herbs and home made Bagels.
