Miestrone Soup


Hearty Vegetarian Soup

Serves 4

Ingredients

  • 1 Large Leek, thinly sliced
  • 2 Carrots, chopped
  • 1 Zucchini, thinly sliced
  • 115g fresh beans,cut large
  • 2 Sticks celery, thinly sliced
  • 2lt Massel Vegetable Stock, made to packet instruction
  • 1 400g can chopped tin tomatoes
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • 400g can kidney beans or cannellini beans
  • 1/3 cup small pasta shapes
  • Fresh parmesan cheese, finely grated (optional)

Method

  1. Put all fresh vegetables into a large saucepan with olive oil. Heat until sizzeling, then cover, lower the heat and sweat the vegetables for 15 minutes, shaking the pas occasionally.
  2. Add the stock, tomatoes, herbs and seasoning. Bring to the boil, replace the lid and simmer gently for about 30 minutes.
  3. Add caned beans and their liquid together with the pasta, and simmer for a further 10 minutes or until pasta is cooked. Check the seasoning and serve hot sprinkled with parmesan cheese (if using)
