Chow Mein


a classic new york dish

Serves 2 to 4

Ingredients

  • 1 500 g/ 1 ib egg noodles.
  • 2 4 tablespoons vegetable oil.
  • 3 1 medium onion, peeled and thinly sliced.
  • 4 125 g/4 oz cooked meat ( pork, chicken or ham) cut into thin shreds.
  • 5 125 g/4 oz mangetout, or french beans.
  • 6 125 g/4 oz fresh beansprouts.
  • 7 1 teaspoon salt.
  • 8 2-3 spring onions,thinly shredded.
  • 9 2 tablespoons light soy sauce.
  • 10 1 tablespoons sesame seed oil or chilli sauce, to finsh salt for boiling.

Method

  1. 1 cook the noodles in a large saucepan of boiling,salted water according to packet instructions.
  2. 2 drain and rinse under cold running water until cool, and set aside.
  3. 3 heat about 3 tablespoons of the oil in a hot wok, add the onion, meat, mangetout or beans and beansprout, and stir-fryfor about 1 minute.
  4. 4 add 1 teaspoon salt and stir a few times more,then remove from the wok with a perforated spoon and keep hot.
  5. 5 heat the remaning oil in the wok and add the spring onions and the noodles, with about half of the meat and vegetable mixture.
  6. 6 mix with the soy sauce, then stir-fry for 1-2 minutes, or until completely heated through.
  7. 7 transfer the mixture from the wok to a warmed, large serving dish then pour the remaining meat and vegtable mixture on top as a dressing.
  8. 8 sprinkle with the sesame seed oil or chilli sauce (or both if preferred)serve immediately.
