A winter family favourite - only use Calves liver, other livers are too strong.
Thinly sliced liver, dusted in seasoned cornflour, gently sauteed over a medium heat. Grilled tomatoes - caramalised onions and mashed potato served with baby peas and gravy
Prepare the liver - remove any sinew or fat. Slice thinly
Rinse liver under cold running water
Have a dish with seasoned cornflour ready - place the sliced liver slices into the cornflour - cover with a clean tea cloth and set aside
Slice the onions - thinly - using a heavy based pan - put 1 tablespoon of olive oil and 1 tablespoon of butter and melt over a medium heat - add a teaspoon of sugar, add the sliced onions and cook on HIGH until the onions are translucent. Reduce the heat and continue to cook until the onions are browned and caramalised- Place into a dish and keep warm.
Cut whole tomatoes in half - sprinkle with brown sugar, white pepper and a dob of butter. (Grape tomatoes can be grilled whole) place the tomatoes under a HOT grill and cook until soft - remove - keep warm.
6- Wash and peel the Potatoes - Place in to cold water - bring to the boil and cook for 25 minutes on a medium heat. Drain well - return to pan; using a potato ricer or a potato masher- add a good tablespoon of butter, a twist of black crushed pepper and thickened cream. Mash until a consistency of smoothness is achieved - Keep warm.
Cook Baby peas as p er instructions and keep warm.
In a clean heavy based frypan - melt butter and olive oil -once melted add the slices of liver to the p an and fry quickly turning one - liver should be pink in the middle - move from pan and keep warm.
Pour the gravy granules into the frypan add a dash of brown vinegar and mix to a thickened sauce - like thickened cream consistency - Strain.
Have hot plates ready : Spoon a serve of the mashed potato to each plate - add the caramalised onions,the grilled tomatoes, rashers of bacon, the liver and the Baby Peas (or any other preferred vegetable) Pour Gravy over the meat and potato - That is my recipe for good old fashioned Calves Liver. Enjoy
Initially this recipe looks complicated - truely it is not - once cooked it will become easier to cook.
The dash of vinegar at the last moment into the gravy is an initerestinig additional ingrediiant - I believe it possibly counteracts the sweetness of the onions and sugar in this recipe - I would love your comments please.
