Sticky Date Pudding with Toffee Sauce


Easy winter pudding with a delicious sauce.

Serves 6 to 8

Ingredients

  • 60 grams unsalted butter
  • 190 grams/1 cup brown sugar - firmly packed
  • 2 eggs - beaten
  • 190 grams/1 cup pitted dates - chopped
  • 190 grams/1.5 cups self raising flour
  • 1 tsp vanilla essence
  • 1 cup water - boiling
  • 1 tsp bicarbonate of soda
  • toffee sauce
  • 100 grams unsalted butter
  • 150 grams brown sugar
  • ½ cup cream
  • 1 tsp vanilla essence

Method

  1. Preheat an oven to 160 degrees C.
  2. Spray oil a 25 cm round cake tin.
  3. In a medium mixing bowl add the brown sugar, unsalted butter, dates, vanilla essence and boiling water.
  4. Mix until the brown sugar and unsalted butter dissolve. Allow to cool before
  5. adding the beaten eggs - stir continuously.
  6. Add the bicarbonate of soda and stir through.
  7. Sift the Self Raising flour and fold through the mixture until combined.
  8. Pour into the prepared cake tin and place in the oven for 20 minutes before reducing the heat to 140 degrees C for a remaining 20 minutes.
  9. Test with a skewer - it should come out clean.
  10. Allow to cool before removing from the tin and serving with the sauce and your choice of vanilla ice-cream or cream.
  11. Toffee Sauce
  12. Place all ingredients into a small saucepan and bring to the boil for 1 minute.
  13. Pour over pudding when serving.

Notes & Tips

Tastes great with vanilla bean ice-cream in front of an open fire. Watch out for oven times as ovens do vary.
