Hush Puppies


Hush Puppies

This is an Aussie version of an American Gulf dish. Hush Puppies are little deep fried balls of dough, like savoury damper dumplings. Great eaten with dips or they can even be cooked on top of stews & casseroles. But I just enjoy them dipped in Chilli Jam or Sweet Chilli Sauce - yum!

Ingredients

  • 2/3 cup of Cornmeal ( you can substitute with Burghul if you like)
  • 1/3 cup Plain Flour
  • 2 Tablespoons Cornflour
  • 1 Teaspoon of Baking Powder
  • 1/2 Teaspoon of Salt
  • 2 Eschallots (or Spring Onions), finely diced
  • 1 Egg whisked with:
  • 1/3 cup Milk
  • Oil for deep frying ( I use vegetable oil)

Method

  1. Combine Cornmeal, Flours, Baking Powder, Salt & Eschallots in a large bowl.
  2. Add the whisked & combined egg & milk. Mix to make a thick batter/light dough.
  3. Heat oil in frying pan. Test with a chunk of bread to see if it's hot enough.
  4. Carefully drop in spoonfuls of the batter & cook until golden.
  5. Cooking time is usually between 1 - 2 minutes.
  6. Drain on absorbent kitchen towel.
