Fast Bolognese (Bolognaise) sauce

I've posted my big, takes a long time to make bolognaise sauce, and as promised, here's my quick version!

Serves 2

Ingredients

Method

  1. Saute the onions and garlic - when cooked, add mince and brown well.
  2. Once browned, add herbs and tomato paste. Cook well.
  3. Add tinned tomatoes and stir through. If a little dry, add some stock.
  4. Bring to the boil and turn down heat to a rapid simmer - stir regularly, tasting for seasoning.
  5. Cook for 20mins, serving with pasta of choice.

Notes & Tips

* This is the quick version - you can have spaghetti bolognaise on the table in 30mins! * Add chilli flakes for a little bite!

    I always used to use tinned roma tomatoes but in the past 4-5 years have substituted 700-1400ml tomato passata. It results in a sweeter flavour (tomato seeds are notoriously bitter). Alternatively you could pass the tomatoes through a sieve, eliminating the skin and seeds.
