Blackberry Crumble


Ingredients

  • 50g of plain flour
  • 150g of wholemeal flour
  • 150g of Demerara sugar
  • 150g of unsalted butter
  • 2tbsp of dark rum
  • 4 cooking apples (peeled and cut in large chunks)
  • 250g of fresh (use frozen when out of season) blackberries
  • 2tbsp of cracked wholemeal flour

Method

  1. In a bowl rub together the flour with the butter.
  2. Add the sugar. Don t over mix it. It must be crumbly!!
  3. In an oven proof dish, place the apples and the blackberries.
  4. Sprinkle the rum over the fruit.
  5. Cover with the crumble mixture, making sure you’ve got some large bits.
  6. Sprinkle the wholemeal over the top
  7. Place in a hot oven (180 C) for 35min till the crumble is golden and you can test with a knife than the apples are cooked.
  8. Serve hot with crème fraiche or "a l Anglaise!!"- with custard.
