Pork & Cashew Nut Stir Fry

This is my best stirfry. It's a really easy and really tasty dish. You can substitute Chicken or Beef for the pork and use whatever vegies you have on hand.

Serves 4 to 6

Ingredients

  • 500g pork loin fillets - sliced really thinly.
  • 200g cashews.
  • 1 onion - halved and then cut into quarters.
  • broccoli - cut into little florets.
  • 2 medium carrots - really thinly sliced - use a veg peeler.
  • Green beans - cut into 4cm lengths.
  • 2 spring onions - sliced.
  • Sauce:
  • 4 tbsp soy sauce.
  • 4 tbspn chicken stock.
  • 2 good pinches sugar.
  • 2 tbspn honey.
  • 1 tsp ginger.
  • 4 tspn cornflour.
  • 2 tspn sambal oelek.
  • 4 tspn white vinegar.
  • 2 splashes sweet chili sauce.
  • 2 cloves garlic - crushed.
  • 2 red chili's - chopped finely.

Method

  1. Mix all the sauce ingredients and set aside.
  2. have the vegies all cut and ready to go.
  3. Heat 1 Tbsp Peanut Oil in a wok.
  4. Add Pork in 2 batches and fry til lightly brown - remove and set aside.
  5. Heat 1 tspn oil in the wok and add cashews and stir for 1 minute - remove.
  6. Put onions in the wok and stirfry til wilted and have a bit of colour.
  7. Add the rest of the vegetables and stirfry til a little softened - 3 mins.
  8. Add the sauce mixture and stir for 30 seconds.
  9. Add the Pork and Cahews and stir in.
  10. Serve with boiled rice.
