Stir Fried Prawns and ratatouille

My kids had been hassling me to make ratatouille since they'd watched the animation movie of the same name. Hubby doesn't like eggplant or zucchini so he had to bite his tongue...lol. I added prawns just for a difference, nicking a Jamie Oliver flavour.

Ingredients

  • 20 medium prawns peeled and deveined
  • 6 tb sunflower oil
  • Zest and juice from lime
  • 1 tb fresh ginger grated
  • 2 red chillies chopped (didn't let the kids have these)
  • 2 tb soy sauce
  • ratatouille
  • 3 eggplants cut in 3 cm cubes
  • salt
  • 1/2 cup olive oil
  • 2 onions thinly sliced
  • 2 cloves garlic, thinly sliced
  • 3 red capsicums, seeded and cut in 3cm cubes
  • 3 large zucchini cut in 3cm chunks
  • 4 large ripe tomatoes , peeled,seeded, chopped
  • pepper
  • Parsley or basil

Method

  1. RATATOUILLE
  2. Place eggplant on a tray and lightly sprinkle with salt.
  3. Cover with a sheet of foil , press lightly with a few tins and leave for an hour.
  4. Wipe off moisture with kitchen towel and discard juices.
  5. Heat oil in casserole dish and saute onion until limp and golden.
  6. Add garlic, capsicum and eggplant, then cover in casserole and cook gently for 40mins.
  7. Add zucchini, tomato and pepper and cook for a further 20 mins.
  8. PRAWNS
  9. Heat a wok or frypan and add oil, prawns, lime zest and ginger.
  10. Stirfry for 2 mins, until prawns are lightly golden
  11. Remove from heat and add chilli
  12. Season with soy sauce and toss well
