Australian Bush Oysters

Lamb Eggs. Rocky Mountain Oysters. Spring Roe. Cowboy Caviar. Montana Tendergroins. Many different names but a great eat under any name.

Ingredients

Method

  • 1.

Remove sinew and membranes from testicles.

  • 2.

Place into a bowl and cover with water and salt for about an hour to remove the blood.

  • 3.

Add the testies into a large pot with water to cover (they should float).

  • 4.

    Add vinegar to water.

  • 5.

    Parboil then drain and rinse.

  • 6.

Cut each testie into 1/4 inch think slices.

  • 7.

Sprinkle with salt and pepper on both sides.

  • 8.

Mix flour, cornmeal and garlic powder.

  • 9.

Roll each slice through the mixture.

  • 10.

Dip into milk, then dip into dry mixture again. Dip into red wine.

  • 11.

Repeat as often as you like for a thick crust. Drop into hot cooking oil. Remove once golden brown.

Notes

Don't cook for too long.
