BBQ Chicken With Lemon Salt And Prawns

yep you guessed one of my favourites

Ingredients

  • 4 x 200g organic or corn fed chicken wing bone attached
  • 8 x large tiger prawns or king prawns 9u10's or u8's
  • 1 x onion finely diced
  • 1 x clove of garlic crushed
  • 20g x sea salt flakes
  • Pinch of curry powder
  • 10g brown sugar
  • 1 x zest and juice of a lemon
  • 1 x litre chicken stock reduced to 250 ml
  • 50ml x cream
  • 100g x butter
  • 100ml x good olive oil
  • Selection of vegetables of your choice

Method

  1. trim and season the chicken breast with the zest and 15g of salt and 75 ml of the oil
  2. peel and clean the prawns place in a bowl and mix with remaining salt oil and curry powder
  3. turn on bbq or grill to a medium heat once hot place chicken skin side down
  4. in a pan on the stove add a 50g of butter and sweat onion garlic
  5. turn chicken 45 degrees still skin side facing down
  6. add the lemon juice and sugar reduce to a syrup
  7. prepare your vegetables if youre are bbqing them place on bbq now
  8. if you are boiling tor steaming place water or steamer on stove
  9. add chicken stock and simmer
  10. turn over chicken to cook the other side chicken should have been cooking for 10 minutes
  11. add the cream and reduce by half
  12. twist the chicken 45 degrees continue cooking
  13. boil or steam vegetables
  14. when the cream and stock has reduced remove form heat and whisk in buuter keep warm donot reboil
  15. place prawns on bbq and cook for 4 minutes either side
  16. how to chicken is cooked
  17. check under the fillet see if there is any rawness or pink
  18. press with tongs near the wing bone to check there is no blood rising to the surface of the chicken
  19. once cooked serve with sauce and vegetables

Notes & Tips

chicken breast should take 20 - 25 minutes to cook remember there is a fine line between cooked and over cooked , prawns like most seafood is better cooked medium - well , U10 / U8 are industry sizes and they are a decent size stands for10 / 8 prawns per pound (500g) bbqing need a little oil but to much is as bad as none at all

    This is just the thing I have been looking for and I love the presentation....I know that you have the stock/cream sauce but what else have you used sauce/flavouring have you used around the outside? Pesto maybe and ?? Will try this at the weekend.
