Creamy leek and potato soup


Delicious smooth soup of braised leek and potato. Great as a starter especially in winter and very easy to make.

Serves 4 to 6

Ingredients

Method

  1. Start by heating oil and butter in the saucepan. Add to it chopped leeks, onions and potatos. Season with salt and pepper and other seasoning as desired (e.g. vegeta). Allow to caramalise slightly in the saucepan and then add the stock, cover bring to boil and simmer until all ingredients are soft. This should take about 15mins.
  2. Once vegetables are soft the soup is ready to blended, ( I use a hand barmix). Once blended add the cream, test for seasoning,bring to boil once and take off the heat. The soup should now be ready to go!

Notes & Tips

I use this soup recipe for most of my vegetable soups, be flexible and make say pumpkin, potato and onion with a bit of curry or cumin in the same way. They always turn out to be delicious starters for my dinner parties.

    Great soup! Really smooth and subtle flavours! i added some cumin. Also very easy to make and not time consuming.
