Hazelnut Pav Stack with Berries and Cream

Anna's best meringue ...

Serves 8

Ingredients

Pavlova recipe

  • 8 egg whites
  • 2 cups caster sugar
  • 1 teaspoon vinegar
  • 2 dessertspoons corn flour
  • 4 tablespoons boiling water
  • ¼ teaspoons vanilla bean extract
  • 2 cups hazelnuts, roasted and roughly blitzed in food processor

To assemble

  • 600ml cream, whipped
  • 4 cups of fresh or frozen berries (i like rasp berries, blueberries and blackberries)

Method

  1. Put egg whites, sugar, vinegar, corn flour, boiling water and vanilla all into a mixing bowl and beat on high speed for 10 minutes. Mixture should look shiny and hold stiff peaks.
  2. Fold in nuts.
  3. Line 3 baking trays with baking paper and divide mixture into three round meringues
  4. Bake at 120C for 1.5 hrs. Cool in oven with door ajar.
  5. Place the first meringue on your serving plate, top with half the cream and the berries. Place the second meringue on top and again top with cream and berries. Finally crown with the last meringue and sprinkle icing sugar over the top.
