Serve with Anna's Lamb Burgers with Blue Cheese, Pear and Tomato Chutney, Rocket and Chips or her Roasted Garlic Aioli
Wash potatoes if they are dirty and you are leaving skin on. Cut into thin batons
Heat oil to 110 degrees and par cook chips until just soft enough to squish (not to brown)
Drain on paper towel and set aside until ready to serve
Reheat oil to 180 degrees and fry chips for 1 to 2 mins until crisp and golden - serve!
