Lamb Burger with Blue Cheese, Pear and Tomato Chutney, Rocket and Chips

Serve with Anna's Roasted Garlic Aioli, Pear and Tomato Chutney and the Best Chips.

Serves 6 to 8

Ingredients

Lamb burger patties

  • Dash of oil
  • 1 brown onion finely chopped
  • 3 garlic cloves finely chopped
  • 1 dessertspoon rosemary finely chopped
  • 1 dessertspoon thyme finely chopped
  • 1 dessertspoon oregano finely chopped
  • 500gms lamb mince
  • 150gms pork/veal mince
  • Handful breadcrumbs
  • 1 egg beaten
  • 6 green olives, stoned and chopped
  • salt and pepper

Other ingredients

  • 6 to 8 buns
  • 150g of blue costello and/or brie
  • 100g rocket

Method

  1. To make burger patties-Lightly fry onion and garlic in oil until translucent.
  2. Add rosemary, thyme and oregano to the onion mix and allow to cook for a few minutes more.
  3. Put all other ingredients for the patties into big bowl and mix till well combined.
  4. Make burger patties into desired size for buns
  5. Fry burger in lightly oiled pan until browned on one side, turn over to brown other side and top cooked side with cheese. This will cook the burger through and melt cheese also, note you can finish under the grill if desired.
  6. Serve on grilled bun with chutney, aioli, rocket and chips

    Lovely!! Will do this again Used almond meal instead of bread crumbs to keep it gluten free Could have used 1/2 egg mixture
