Grilled Apple and Fennel Salad


  • Cranberry Vinaigrette:

  • 1 cup fresh or frozen cranberries

  • 1/3 cup sugar

  • ¼ cup finely minced onion

  • 1 tsp finely chopped rosemary

  • 1 tsp Dijon mustard

  • 5 Tbsp vegetable oil (or extra virgin soya oil)

  • salt & pepper

  • 2 Cortland apples (or MacIntosh)

  • ½ head fennel

  • 2 Tbsp vegetable oil

  • Traviso radicchio, for presentation


  • 1.

    For cranberry vinaigrette, simmer cranberries, sugar, onion and rosemary with ½ cup water until cranberries “pop”, about 20 minutes.

  • 2.

    Remove from heat and cool to room temperature.

  • 3.

    Whisk in Dijon mustard, then slowly whisk in oil.

  • 4.

    Season to taste.

  • 5.

    Preheat grill on high heat.

  • 6.

    Core apples and cut into ¼-inch slices (do not peel.

  • 7.

    Cut fennel into slices of the same thickness (leave core in) and toss apples and fennel in oil.

  • 8.

    Grill apples and fennel until lightly charred on both sides, but still crunchy, about 4 minutes in total.

  • 9.

    To serve, arrange radicchio leaves on a platter and arrange apples and fennel over. Spoon cranberry vinaigrette over and serve.

Sorry, forgot to let you know that it was the grilled apple and fennel salad that I printed out. Will let you know if everyone loves it, as I am sure that they will. Thanks

Just printed this recipe out, so as I can try it. Sounds really delicious, so, I shall make it and try on the family. Will let you know
