Fruit and Nut Muesli

Ingredients
  • 1 cup rolled oats (not instant)
  • 1/3 cup sliced almonds
  • 1/4 cup wheat germ
  • 1/4 cup barley flakes (found at health or bulk stores)
  • 2 Tbsp unsalted pumpkin seeds
  • 1 Tbsp sesame seeds
  • 1/3 cup raisins
  • 1 1/2 cups yogurt
  • 2 Tbsp honey or maple syrup
  • 1 small apple, peeled and coarsely grated
  • 1 small banana, diced
  • 1 cup diced strawberries
Method
  • Preheat oven to 350F (180C) and line a baking tray with parchment paper. Measure oats, almonds, wheat germ and barley flakes onto prepared tray and stir to mix. Toast for 12 minutes, stirring once and cool.
  • Pour cooled mixture into a medium bowl and stir in remaining ingredients. Cover and chill for at least 4 hours or overnight.
Serves 4
