Gooey Lemon Cake

I found this recipe on a friend from Canada's notepaper and on a whim decided to try it out. Oh my gosh! It's fantastic - and so easy to do. It has a kind of cakey/pastry base and a sweet, tart, gooey filling.


  • Base:

  • 1 box Lemon Cake Mix.

  • 1 Egg.

  • 125g Butter - melted.

  • Filling:

  • 250g Cream Cheese.

  • 2 Eggs.

  • 375g Icing Sugar.


  • 1.

    Preheat oven to 180C

  • 2.

    Mix ingredients for base and press into a 25cm round greased springform or removable base tin.

  • 3.

    Mix filling ingredients with beaters til combined and pour over base.

  • 4.

    Bake for 40 mins - Do not overbake!

  • 5.

    Dust with Icing Sugar if you like.


Ignore the cake mix instructions on the packet - just follow this recipe as is written.
