Gooey Lemon Cake

I found this recipe on a friend from Canada's notepaper and on a whim decided to try it out. Oh my gosh! It's fantastic - and so easy to do. It has a kind of cakey/pastry base and a sweet, tart, gooey filling.

Serves 12

Ingredients

  • Base:
  • 1 box lemon cake mix.
  • 1 egg.
  • 125g butter - melted.
  • Filling:
  • 250g cream cheese.
  • 2 eggs.
  • 375g icing sugar.

Method

  1. Preheat oven to 180C
  2. Mix ingredients for base and press into a 25cm round greased springform or removable base tin.
  3. Mix filling ingredients with beaters til combined and pour over base.
  4. Bake for 40 mins - Do not overbake!
  5. Dust with Icing Sugar if you like.
