Gooey Lemon Cake

I found this recipe on a friend from Canada's notepaper and on a whim decided to try it out. Oh my gosh! It's fantastic - and so easy to do. It has a kind of cakey/pastry base and a sweet, tart, gooey filling.

Serves 12

Ingredients

Base:
1 box lemon cake mix.
1 egg.
125g butter - melted.
Filling:
250g cream cheese.
2 eggs.
375g icing sugar.

Method

Preheat oven to 180C
Mix ingredients for base and press into a 25cm round greased springform or removable base tin.
Mix filling ingredients with beaters til combined and pour over base.
Bake for 40 mins - Do not overbake!
Dust with Icing Sugar if you like.

Very impressive. I've noticed Americans use packet cakes and puddings in their home cooking. What an easy recipe and it looks delicious! It would be a great standby recipe.
